Corn Pudding to the Rescue

8am Monday Morning.  Mr. Fix-it is already at work, I’m getting Andy ready for school, and my phone chirps.

Mr. Fix- it – “Today is the office Thanksgiving Feast, what can you make?”

Me – “Ummm…….. I might have everything to make corn pudding?”

Mr. Fix-it – “That would be great!”

Me – “I must be the best wife ever!”

Mr.Fix-it – “Yep!”

Mr. Fix-it loves this recipe, it is definitely comfort food!  It is creamy and delicious, but ridiculously easy to make, it literally is no-fail!  This recipe always graces our holiday table, and is Caroline’s ‘must have’ dish.

First you gather all the ingredients, I had to borrow the cream corn from my mom this morning, but usually I have everything on hand.  Thanks Mom!

Mix them all together, and pour them in a 2 quart dish.

Bake for 1 hour, and voila!

He didn’t bring any home, no surprise, there are rarely leftovers.  But he did bring home rave reviews, and a thank you kiss, which made it worth all the ‘trouble’!

Corn Pudding

1 can Cream Corn

4 T Flour

2 T Sugar

1/4C Butter, melted

4 Eggs, beaten

1C milk

Salt and Pepper

In a large bowl mix together the corn, flour, sugar and melted butter until combined.  Stir in the beaten eggs and the milk.  Season with a pinch of salt and a pinch of pepper.  Pour into an ungreased 2 quart casserole dish.  Bake at 350 for 1 hour.  Enjoy!
